RECIPE PREPARATION Radaute soup:

The meat together with the onion, the carrot and the delicacy are boiled. When the meat is cooked, set it aside and strain it. The resulting juice is put in the pot, the breast is deboned and cut into small pieces. The meat is turned over in the pot and boiled for another 2-3 minutes. It is served with vinegar, garlic sauce and sour cream, as in belly soup.


According to historical data, this kind of food was cooked for the first time in the ’70s, in Rădăuți municipality, in Suceava county. That's where the name comes from. The soup can be served as main dish at noon, but can also be consumed in the evening, at dinner. It may seem surprising, but the soup from Radauti appeared from a trivial incident. The one who invented this dish was Cornelia Dumitrescu. The woman introduced chicken into belly soup, at the insistence of her husband, who wanted chicken-flavored belly soup. And voila!

Ingredient: a chicken breast 2 egg yolks 200 ml cream 2 carrots 1/2 celery a pepper capsicum an onion 4 cloves garlic 2-3 tablespoons vinegar a bunch of parsley salt and pepper.

After we have all the ingredients ready, clean the vegetables and wash the chicken breast. All are boiled in a pot for about 40-50 minutes and salted to taste. After the vegetables and the chicken pieces have boiled well, remove the pot from the heat. Subsequently, they are removed from the vessel and left to cool. Pass the celery, onion and one of the two carrots, and chop the pepper and the other carrot.

In a bowl, mix the two egg yolks with the cream until smooth, over which the crushed garlic is added, together with the soup cup, which has been left to cool beforehand. The last phase of cooking involves putting the pot of soup back on the fire. In it is added the chicken breast loosely, together with the mashed and finely chopped vegetables. Boil for another 10-15 minutes. Subsequently, the composition of eggs, cream and garlic is added to the soup. Mix well and put 2-3 tablespoons of vinegar, finely chopped parsley.

Hello dear lusts. Today I prepared RĂDĂUȚEAN SOUP. One of my favorite soups. Some time ago I was with my father in Romania and he served me this soup, it seemed to me then the tastiest soup ever eaten. I hope you like my Rădăuțean soup recipe and that you are happy to prepare it. I wish you to continue to have a tasty day and good appetite!

Ingredients

  • 1 domestic chicken (about 1.5 - 2 kg.)
  • 2 carrots
  • ½ celery root
  • 1 parsley root
  • 1 parsnip
  • 2 small or medium onions
  • 500 ml. - cream 30% fat
  • 3 yolks
  • 2 tablespoons - white flour
  • 2-3 tablespoons of vinegar (depending on how sour you like)
  • Salt

Method of preparation:

  1. First of all, cut the chicken into smaller pieces.
  2. Then put the pieces in a large saucepan with cold water. Also add parsnip, parsley root, celery root, whole carrots, onions and add 2 teaspoons of salt.
  3. Put the pan on medium heat and leave it until the water starts to boil and you will see how the meat foam forms. Remove the foam with a spoon or foamer. When the water starts to boil, turn on the heat slowly and cook the meat for about an hour and a half or until it becomes soft.
  4. After the meat has boiled, take the vegetables out of the pan and place them in a bowl. Do the same with the meat and strain the soup.
  5. Then take a bowl, put in the cream, flour, egg yolks, finely chopped garlic, season with a little salt and mix everything together.
  6. Gradually pour in this mixture 3 tablespoons of hot soup each time, stirring vigorously so as not to cut the eggs.
  7. Then pour the cream sauce and eggs into the saucepan with the soup, mixing quickly.
  8. Set the soup aside while you take care of the other ingredients.
  9. In order not to throw away the vegetables, cut the carrots and celery into small cubes. Then break the meat into small pieces, removing the skin and bones.
  10. Put the chopped vegetables and meat back in the soup. Season with a little more salt if needed and pour 2 tablespoons of vinegar.
  11. At the end, put the pan on high heat and stir from time to time until it reaches the boiling point. It is important not to boil because you risk cutting the soup.
  12. Serve the soup hot with fresh parsley. Good appetite!

Method of preparation

Slice the chicken into cold water with salt and, from the moment it starts to boil, take the foam whenever it appears. Meanwhile, clean and cut the vegetables smaller and then, after the foam disappears, add them to the pot with the chicken pieces.

Leave everything to boil until the meat and vegetables are penetrated. Then, the meat is removed and left to cool a little, the vegetables can be used for any other culinary preparation, and the juice is strained. The strained juice is put back in the pot and straightened with the cream mixed with the yolks.

We have very little left until we finish cooking the Radauti soup. Now cut the chicken into thin strips and add to the pot. Boil everything for another boil. Turn off the heat, add the fresh greens and put the lid on until ready to serve.
